Gazpacho Chilled Soup is a summer staple for me, so I had to get this recipe posted before summer's end. It's bursting with fresh summery flavors and under 50 calories per serving! This recipe is simple to make and keeps well in the fridge for up to a week. I love to eat it for lunch with a salad and for dinner it pairs well with my turkey feta avocado burgers.
Gazpacho just gets better over time as the flavors have time to set, so it's best if you can make it ahead of time. It's delicious by itself, but you can garnish with a slice of avocado and a spoonful of sour cream. Enjoy!
